Farmer's Recipe: orange-ginger chicken
This is a recipe that found me when I was deep in the trenches of trying to find AIP (autoimmune protocol) diet friendly foods. Since I found it, I’ve made it over and over again til it eventually turned into this simplified version of whatever recipe I began with:
Orange-ginger Chicken
1-2 lb chicken wings (or preferred cut)
4-5 oranges juiced and zest saved
3 tbsp honey (adjust up or down for sweetness)
1-2 inches ginger finely minced
2-4 cloves garlic finely minced
Sprinkle of crushed red pepper to taste (leave out if following a nightshade-free diet)
Bake your chicken wings (or any skin-on cut preferred) at 425f for 45-55 mins, or until fully cooked.
While the chicken bakes, add all other ingredients to a pan and simmer it to combine and thicken.
Add chicken to thickened sauce and fully coat. Then enjoy your sticky, sweet wings!
I've been known to make just this sauce and use it for quick chicken (or fish) meals later on, too.
