Farmer's recipe: easy pineapple chicken bowl
This is one of my favorite one pot recipes. Again it’s a recipe that found me at a restricted diet time in my life, and I have since adjusted it to my own pantry situation.
Pineapple Chicken Bowl
1-2 lb chicken breast
1 pineapple
1 shallot finely minced
1-2 jalapeño finely minced
Hot sauce to taste
1 cup rice
I like to chop my chicken and pineapple into similar-sized chunks, then tossing them along with all the rest of the ingredients (except the rice) into a bag or bowl to marinate in the fridge. I usually do this an hour or so before cooking it up, not too far ahead. Though you could marinate it overnight if you prefer.
When I’m ready to cook it up I'll get some rice cooking, then toss the chicken mixture into a hot skillet. Let it simmer til the chicken is cooked all the way through, and the sauce has thickened slightly.
Then simply scoop your chicken mix on top of some rice and enjoy!
*I usually top this recipe with soy sauce after plating it these days, but when I was following the AIP diet strictly I often added in coconut amino to the bag for marinating*
